Warm Salmon Nicoise Salad


20130529-160159.jpg The weather has been quite miserable and although we should be welcoming lovely evening salads It's not been quite warm enough to have them completely cold in my opinion.

Last night I created a warming twist on the traditional Salmon Nicoise, I roasted the new potatoes and green beans in olive oil and tossed these into the salad whilst still hot, pan fried the salmon and flaked it over the salad also hot...and I made a roasted pepper, feta cheese and onion salad.
